This it the 1st part of a 3 part series of videos of Indian Food Ingredients with chef Bidu from Malabar House in Fort Cochin in Kerala India.
Bidu is the head chef of Malabar House and he was kind enough to take us on a personal tour of his favourite vegetable markets only a short ride down the street from the restaurant. All vegetable food ingredients comes direct from these markets and is supplied on a daily basis to ensure freshness and quality.
In this video Bidu takes us through the many ingredients that he uses in the restaurant and explains how he uses these them, including the popular banana flower.
I was game enough to try one of the many chillies and it was the hottest chilli I have ever tried. As soon as I placed the chilli on my tongue it instantly began burning and I was sweating. We finish this video with my mouth on fire and burning from the chilli!
